#6 - Pink Wednesday

This has been another crazy day!  It seems like every second is booked with work, cleaning the house, and most importantly - bebe, puppy and hubby!

My goodies from PurpleLabNYC arrived today and I am super excited to try them out!  I will give you my reviews as soon as I do, but I highly doubt they will be anything but amazing!

I am getting ready for the parents to invade this weekend and prepping for our Easter party - so excited!  No one loves to throw a cheesy get together as much as I do!

Easy Eggy Face Mask
So after I made the face mask out of egg whites last week, I decided to do some research (Google, I live for you) and figure out how to do something with the yolks.  It turns out that egg yolks are extremely moisturizing for your skin, lemon juice can take the red out and olive oil is super softening.  I mixed one egg yolk, several drops of lemon juice and a couple of teaspoons of olive oil together and slathered that on for 10 minutes.  My skin feels Avery-butt soft and is glowing!!
Tasty Tuna and White Bean Salad
I have been cleaning out all of our kitchen cabinets and found a random can of white beans (accidental purchase!) and didn't want to waste them so I googled some ideas and came up with this tasty recipe!
1 can white beans, drained
2 cans tuna fish in water, drained
1/2 purple or white onion, finely chopped
1/2 cup low-fat or fat free mayo
2 teaspoons chopped cilantro
2 teaspoons pickle relish (optional)
3 tablespoons dijon mustard
1 or 2 crushed garlic cloves
Parsley, for garnish

Blend all ingredients in food process and serve in a whole wheat wrap or on whole wheat toast!
Finally, I stopped at Target (always a dangerous thing to do) and picked up this adorable pink argyle cardi and madras skirt!  The skirt is an awkward length, but for only $19.99 I can hem to the perfect length!

I can't believe it is already Monday again - and almost Easter!  That means the parents are coming in four days and Easter celebrations for Avery begin!  

I am completely obsessed with Bethenny Frankel's Skinnygirl line and have been making so many yummy recipes from her Skinnygirl Dish cookbook.  I am going to make these delicious and healthy cupcakes for desert on Easter Sunday!

Not-so-red Velvet Cupcakes
Makes about 24 cupcakes
2 1/2 cups oat or whole wheat flour                                                                                                                                 
1 cup low-fat buttermilk
1 1/2 cups raw sugar (or Splenda)                                                                                                                                  
2 large eggs, at room temperature
1 teaspoon baking powder                                                
5 tablespoons beet juice (from a can)
1 teaspoon salt                                                                   
1 teaspoon white vinegar
1 teaspoon cocoa powder                                                  
1 teaspoon real vanilla extract
1 teaspoon baking soda                                                    
3/4 cup vegetable oil

1. Preheat oven to 350.  Put liners in cupcake/muffin tins.  If you don't have enough tins, make recipe in batches (which I do.)
2.  In a large bowl, sift together the flour, sugar, baking powder, baking soda, salt and cocoa.
3.  In a separate bowl, whisk together the vegetable oil, buttermilk, eggs, beet juice, vinegar and vanilla extract.
4.  Combine the flour and oil mixtures and beat with an electric mixer until the batter is very smooth, about 2 minutes.  Pour the batter into the cupcake liners and bake for about 20 minutes, rotating the pan after 10.
5.  After the cupcakes cool completely, frost them with Cream Cheese Frosting (recipe follows.)

Cream Cheese Frosting

8 ounces fat-free, softened                                              
1/2 teaspoon vanilla extract
1/4 cup softened butter substitute (I use Parkay)               
Beet juice      
1 cup confectioners' sugar                                               

Mix all of the ingredients together in a large bowl and beat with an electric mixer until smooth.  Add beet juice in drops until you reach desired shade of pink or red.  Refrigerate for at least 30 minutes.  Frost cupcakes and top with any decoration!

So tasty and low fat!  Yummy Monday!

Happy Friday!!  What are everyone's plans for this weekend?  The hubs and I are going wine tasting with Aunt T. in Temecula - something we haven't done since we met there!!

So I have recently become obsessed with decorating our apartment in preppy, nautical themes and found some adorable things at LL Bean.  I need your thoughts!

This rug is so stinking cute!  I think it could be a necessity.
I adore this bedspread (and the bed.)  It would match our white bedroom furniture perfectly and I cannot have enough madras in my life lately!

On a beauty note, I tried another fun kitchen trick from the Black Book of Beauty for nails and hands.  I haven't had time to get a mani in too long so I followed this advice and it worked:

1.  Take your old coffee grinds and use them to exfoliate your hands, then rinse.
2.  Mix a cup and a half of warm water with the juice of half of a lemon and soak your nails for 5-10 minutes.
3.  Finally, rub some olive oil into your cuticles.

Your hands will be instantly perked up, smoother and softer - and you won't even have to leave the house!

It's Thursday... which means Real Housewives of NYC! Perez Hilton will be making a guest appearance tonight!! It was announced today that they are finally canceling the Hills, because as we all know, I moved here thinking life would actually resemble that of LC's - and Kristin Cavallari just isn't cutting it.

On a different note, I have been reading this awesome/intense book called The Black Book of Hollywood Beauty Secrets which details all sorts of A, B, even C-list oddball beauty routines.  Last night I tried one of the make-it-yourself face masks, and I swear it worked!  My skin feels good and looks good!  Here is the recipe:

1 egg white (leave the egg out of the fridge to get it to room temperature)
5 drops of lemon juice
2 drops of olive oil

Whisk the mixture together and spread it on your face and neck.  Wash off after 10-15 minutes.  Your skin tone will look more even and your pores will be smaller.

Welcome to the world pink and fabby!

Hello world!  It's pink and fabby here - so excited to get started! This blog will my daily vehicle to express my thoughts on the world (especially everything pink and fabby!)  It will also link to my online boutique,  The boutique is in the process of being born and will be up and running soon!  I'll leave with this sweet treat - which I will be attempting to re-create in a low-fat form soon!
