Happy Friday!! What is everyone doing this weekend?

If you know me, you know I have a mild obsession with Bethenny Frankel, particularly her sarcastic and funny comments, simple and classic style, and amazeballs healthy natural food recipes.  Last night I had a major urge to eat chocolate cake so I made this super easy and low-fat recipe from her book the Skinnygirl Dish.  Delish!!!


How-Is-This-So-Moist Chocolate Cake (page 182)
1 1/4 cups oat flour
1 cup raw sugar (I use 1/2 cup Splenda and 1/2 sugar)
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup warm water
1 teaspoon vanilla extract
2 tablespoons vegetable oil
1 teaspoon apple cider vinegar

Preheat over to 350.  Mix all ingredients in a bowl and pour into a loaf pan coated with cooking spray.  Cook for 40-50 minutes, turning halfway through.

There is a peanut butter glaze recipe to top this with, but I think it tastes yummy with some fat free whipped cream.

  1. LOVE that book!! You should try this recipe, I make it before every race - it is super healthy and keeps you full for a while and you can customize it however you want!

    * 1 1/4 cups whole wheat flour
    * 1 1/4 cups whole oats
    * 1 tsp. baking powder
    * 1/2 tsp. baking soda
    * 1/4 tsp. salt
    * 1/2 tsp. cinnamon
    * 1 cup applesauce
    * 1 cup skim milk
    * 1/2 cup packed brown sugar
    * 1/2 cup sugar
    * 2 tbsp canola oil (i've left this out and it was still tasty!)

    Preheat oven to 400, mix ingredients and bake for 18-20 minutes!
