Happy Cinco de Mayo! This used to be one of my favorite holidays to get out and drink margaritas while dancing/stuffing my face with chips and guacamole all night.... then I had a bebe :) Did you know that the average dinner at a Mexican restaurant (one or two blended margaritas, chips and guacamole, enchiladas, etc.) is 2300 calories and 76 grams of fat?! Ummmm... scary! Since the hubs works super late tonight, I decided I would spend this May 5th having a healthier celebration with la bebe.
First stop, Skinnygirl Margaritas! These can be bought pre-bottled (go to www.bethenny.com to find locations) or you can make them yourself using the following recipe:
Skinnygirl Margaritas
2 oz. clear premium tequila (Patron)
Splash of orange liquor
Juice of 4 fresh lime wedges
Mix all together over ice
*To make a frozen version, just blend with ice in blender
Margarita Cupcakes
(makes 24 cupcakes)
3 sticks butter, softened (I use ICBINB Light)
2 cups sugar in the raw
4 large eggs, room temperature, plus 1 large egg white
2 tablespoons vegetable oil
2 3/4 whole wheat flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons salt
3/4 cup plus 2 tablespoons soy milk
Grated peel of 4 limes
1/4 cup lime juice
1 teaspoon vanilla extract
2 1/2 cups confectioners sugar
2 tablespoons tequila
1 drop green food coloring
1/2 cup large sugar crystals
24 lime wedges
*Preheat oven to 350 and put cupcake liners in cupcake pans
*Beat 2 sticks butter and granulated sugar with electric mixer until creamy. Gradually beat in eggs, egg whites and oil. scrape down the sides of bowl and mix again.
*In a medium bowl, whisk together flour, baking powder, baking soda and 1 teaspoon salt. In a large measuring glass, stir together milk, 2 tablespoons lime juice, and 1/2 teaspoon vanilla extract. On low speed, mix in 1/3 wet mixture, then 1/3 dry mixture, repeat and end with dry mixture. Mix in 1/2 of the grated lime peel.
*Feel each baking cup liner 3/4 full with batter. Bake about 25 minutes, or until a toothpick in the center comes out clean. Let cool completely for 30 minutes.
*Meanwhile for the frosting, using the electric mixer, beat the remaining stick of butter until creamy. Beat in 1 cup confectioner's sugar, tequila, remaining lime juice, lime peel, 1 teaspoon salt and food coloring until smooth. Beat in the remaining 1 1/2 cups confectioner's sugar one-third at a time.
*Spread the frosting on the cooled cupcakes and rim with the large granulated sugar.
Low-Fat Mock-a-Mole
1 avocado, peeled, pitted and mashed
1 cup cooked green pees
1/4 cup chopped fresh tomatos
2 tablespoons chopped fresh cilantro, plus more for garnish
1 tablespoon chopped red onion
1 tablespoon chopped fresh parsley
2 teaspoons fresh lime juice
1 teaspoon Worcestershire sauce
1 teaspoon garlic salt
1/2 teaspoon black pepper
3/4 teaspoon Tabasco sauce
Combine all ingredients in a large bowl and blend with an immersion blender until smooth. Garnish with cilantro. Service with multi-grain tortilla chips and raw veggies.
