Fabulous Food - Caprese Salad

I haven't done a food/drink post in ages (literally a year I think) so I thought I would try to do more of that! My cooking has been significantly less since we have been staying with my parents' because (luckily) my mom loves to treat us to meals out.  However, I have been trying to make an effort to cook more and one of my summer favorites has been a caprese salad!  I am very picky when I order them at restaurants because they can be hit or miss but one I had several years ago at a local restaurant that has since closed stuck with me and I have tried to make mine as similar as possible.


* Mozzarella
* Tomatos (hot house or heirloom if available, or yellow mixed with red)
* Arugula
* Basil
* Extra Virgin Olive Oil
* Balsamic Vinegar
* Salt & Pepper

I use the roll of mozzarella from the cheese section (I avoid the balls that are soaking in water) and slice with a thick knife. I slice the tomatoes and lay down a thin bed of arugula followed by a round of tomatoes with a slice mozzarella per tomato.  I sprinkle with salt, pepper and basil followed by a few drizzles of evoo and even less of the balsamic.

Easy and delicious!

  1. Did you know that caprese salad is one of my all time favorites and what I almost always order as an appitizer, when on the menu, at an italian restaurant! Yum...so fresh and delish! I would love some right now! :)
