Recipe: Crispy Spaghetti

I have had this idea of idea spaghetti with breadcrumbs in my head for a while now, so I did some research online and with a recipe in hand and some of my own tweaking here is what I came up with:

Crispy Spaghetti
Spaghetti (I used 1/2 a box, but use as much or as little as you want!) 
1/3 - 1/2 cup dried bread crumbs
Salt and Pepper
1 stick of butter
1 cup light ricotta cheese
1 cup grated parmesan
1 tbsp garlic (pressed or from bottle)

-Cook spaghetti according to instructions and preferences (I like al dente)
-While spaghetti cooks, heat evoo (I eyeball about 2 tbsp) in a small skillet.  Add the bread crumbs and cook over medium heat until browned, about 2 minutes. Remove from heat and stir in salt and pepper and parsley to taste. Set aside.
-In a small, heavy saucepan, melt the butter over medium heat.  Cook until butter is foamy and brown, about 5 minutes.  Remove from heat.
-Drain the pasta and return to pot.  Add the browned butter and cheeses.  Add more salt and pepper and parsley to taste and toss.  Transfer to a platter or large serving bowl and top with bread crumb mixture.

This is an easy and yummy dinner that I serve with a side salad.  It fills you up surprisingly quickly and with a small portion!  Feel free to add in some chicken as well!
