Holiday Recipes

For the past few years I have made a traditional Christmas day dinner and a Christmas Eve dinner.  However, this year, we were able to spend the holidays with family instead of by ourselves in California.  This meant not as much food to cook either (I actually love cooking big meals.)  So I made a semi-traditional meal for Christmas Eve dinner.  We had a roast chicken, cornbread stuffing, scalloped potatoes and a veggie-filled salad followed by copious amounts of cookies.  

My husband felt the need to cut the chicken with a head light on... too much Christmas fun?

 The scalloped potatoes are easy and tasty! I got the recipe out of an old cookbook of my mom's and tweaked it a bit.

5-6 russet potatoes
2 cups milk
1 cup (or more if you like!) shredded parmesan cheese
1 white onion
White flour
Salt and Pepper
1 stick of butter

  • Preheat oven to 375 degrees
  • Slice potatoes thinly (not potato chip thin - about 1/2 inch width) and parboil for 4 minutes. Drain and set aside.
  • Dice onion.
  • In a pyrex baking dish or large casserole dish (I use both depending on where I am cooking) layer potatoes and onion in a thin layer, then sprinkle with flour and small pats of butter. Continue doing this until you have used up all of the potatoes and onion.
  • While doing the above step, scald the milk in a saucepan (should take about five minutes.)  Pour over the potatoes and onions.
  • Sprinkle with S&P to taste and the remaining butter.
  • Bake for 45 minutes.  Add parmesan to the top and bake for another 10-15 minutes until cheese bubbles and top starts to brown.

Holiday Nails

My little lady went through a serious holiday nail phase this week.  Here are a couple of shots of her manicures (including one self-applied "sticker" manicure!)

I ended up putting the last one on my nails too.  It's Smitten for Mittens by OPI and has some red sparkles in it - perfect for Christmas or New Years!

A little Christmas Recap

Happy day after Christmas! I hope everyone had a great holiday!  We had a great one!  Miss A. has a nasty cold (and she never gets sick either) that crept up on Christmas Eve.  She still managed to eat a ton of cookies and play with all of Santa's loot!  Here is a little recap of the last couple days in iPhone pictures...

I got one of these for Christmas and can't wait to learn how to use it and step up my pictures!

Holiday Outfits

I love, love, love to dress up for the holidays but I am pretty sure I will be spending this year in sweats/pajamas/anything I can fit into.  To make up for it I put some fun holiday-esque outfits together.  I also discovered Dorothy Perkins (see the red dress below.)

Christmas Wrapping

I finally got started on my Christmas gift wrapping yesterday!  Keep in mind, I bought my wrapping supplies as they were putting them on the shelves in Target the beginning of November.  Nothing like a little pregnant procrastination this year!  I had big plans on making everything super unique and cute this year.  After barely making a dent in the wrapping I will chalk my goals up to a big fat FAIL.  I made up for it by trolling Pinterest for some holiday wrapping eye candy though :)

The polka dots are my fave! I went with red with white polka dots this year! I'll probably post pics later this week!

This Week in Pictures...

How was your weekend?  Ours definitely did not turn out as planned - it's a long story but let's just say it involved my husband catching a thief in the midst of stealing his car!  Do you ever feel like you are the person with the unnecessary drama because I am starting to feel that way!

 We finally busted out the mistletoe headband!  It's our new favorite holiday accessory!

 On a long drive back to PA, Maggie fell asleep on my Peppermint Mocha latte.  She has good taste ;)

 I promise this wasn't a planned mommy and me matching moment... we just happen to like the same things :)

But, now that it is the 19th I am getting myself moving to get Christmas cards in the mail and gifts wrapped!  I finished all of my shopping super early but somehow haven't managed to get around to everything else... oops!

DIY: Dog Bed

My poor little Maggie dog had been desperate for a new doggie bed and the offerings at Petco/Petsmart and Target just weren't cutting it.  I did some searching online and got inspired by the whole idea of a shabby chic one, but couldn't bring myself to spend $150 or more on one!  So, I searched (my mom's house) and came up with a giant wicker thing (may have been an old pet bed of some sort) and was lucky enough to have my sister-in-law help me! It took me way too long to complete this but here it is...

This looks exactly like the bed I used.  I used about two cans of white spray paint (should have used a primer - note to self!) I got one package of stuffing and a yard of fabric.  Thank you to my SIL for sewing it for me!!

 And that is a happy puppy! Next project, a dog toy bin!  She needs to keep all her goodies somewhere!  This was super easy and SO much cheaper than buying a new bed!  I think I spent $25 total!

Fashion Crush: Giuliana Rancic

Do you guys watch Giuliana and Bill because I totally do! I know a lot of it seems contrived but I still can't help watching the way they interact.  I also love G's style!  She dresses in a very fun, party girl manner with a big focus on fun dresses and separates and minimal accessories. 

 GR always looks like she is about to head out to a fab party with her girlfriends and I love that!  I'm sure you have heard all about her struggles with infertility and most recently, breast cancer.  Gotta give her HUGE props for being open about all of her challenges and facing them head on!  She is a tough cookie with an amazing wardrobe!
