Recipe: Loaded Baked Potato Soup

I love crock pot recipes.  It doesn't matter how labor intensive they may actually be, to me they are infinitely easier in the end when you don't have to stand stirring a pot.  I found this tasty little gem on Pinterest (my new recipe haven) and decided to give it a try last night.  I was not disappointed!


6 large potatoes, peeled and cut into cubes
1 onion, chopped
1 quart chicken broth
3 cloves of garlic, minced or pressed
1/4 cup butter
Salt and pepper
1 cup cream or half and half
1 cup shredded sharp cheddar plus extra for crumbling
3 tablespoons chives
Sour cream
8 slices bacon, crumbled

1.  Combine first seven ingredients in crock pot and cook on high for four hours or low for eight.

2.  Mash mixture until potatoes are coarsely chopped and soup becomes thicker.

3.  Stir in cream, cheese and chives.

4.  I then added a step and used a hand mixer to blend it all together a bit more.

5.  Top with crumbled bacon, extra cheese and a dollop of sour cream.  (I skipped the last two to leave out some calories.)

Serve and enjoy!
