Recipe: Salmon and Quinoa Salad

I have started to kick the diet into high gear, which means I have to try to cook MUCH healthier/lighter.  This is something I have tweaked over the last couple of years and it has become a go-to favorite of mine.  I try to make enough for leftovers since it's so healthy!


Salmon
Salmon Filet (I use enough for four servings)
Light olive oil margarine
Salt to taste
Dill to taste
1/2 Lemon

-Preheat oven to 325
-Cover salmon with two teaspoons or so of margarine
-Sprinkle with a pinch of salt, juice of half a lemon and dill (I like a lot of dill)
-Bake for 25 minutes in a Pyrex dish

Quinoa Salad
1 cup cooked quinoa
3 teaspoons olive oil
Salt and pepper, to taste
Parsley (eyeball, taste)
Lemon
Feta Cheese (one handful)
Five diced scallions

-Combine quinoa with olive oil, salt and pepper and parsley and stir
-Add in feta and scallions and stir again
-Squeeze in juice of other half of lemon and give a final stir

This is a great summertime meal or when you are in a hurry because it's quick and nutritious! Enjoy :)
