Creamy Sun-Dried Tomato Penne

Pinterest you have put my beloved cookbooks to shame.  It's a happy loss :)  Anywho, I made this recipe recently and it was TAST-E!  I changed a few things up, but this is definitely a new Pinterest fave!


2 cups dry penne (I used whole wheat and spinach)
8 chopped sun-dried tomatoes
1 (12)oz can low-fat evaporated milk
2 cups shredded Italian cheese (I used parm and mozzarella b/c it's what I had)
1 teaspoon dried basil
1/4 teaspoon garlic powder
1/4 teaspoon black pepper

-Make pasta according to instructions.  Add sun-dried tomatoes to the boiling water for the last two minutes. Drain all.

-While pasta is cooking, combine milk, cheese, basil, garlic powder, and pepper in a medium sauce pan.  Cook over medium to low heat, stirring occasionally.  Remove from heat when cheese is melted.  

-Add pasta and sun-dried tomatoes to cheese sauce and combine.
-Serve and enjoy!
