Recipe: Easy Eggplant Parm

This has been one of my go-to lunch recipe lately.  It is easy, delicious and filling!


Ingredients
1/4 of a small eggplant, thin sliced
Part-skim mozzarella
Shredded parmesan 
Spaghetti sauce of choice (I use Vesper Brothers because it is all natural and DELISH!)
EVOO
Salt and Pepper

Preheat oven to 375
Layer sliced eggplant onto aluminum foil on baking sheet
Drizzle eggplant with evoo
Bake for 12 minutes
Remove from oven
Top with one teaspoon of spaghetti sauce, one small chunk of mozzarella, s and p, and a pinch of parm
Bake 10 more minutes
