Easy Summer Plate: Brown Sugar Rubbed Pork

Is it just me or is it so much harder to cook during the summer?  I am more tired by the end of the day from being in the heat and sun with the kiddos or just too warm to cook sometimes (I know, I'm lazy!)  That being said, I tend to stick to simple recipes that take minimum effort, time and ingredients (a grumpy baby may have something to do with this too.)  I found this little gem on Pinterest and tweaked it a bit for our tastes (Josh doesn't like spicy food so I worked around that.)

Brown Sugar Rubbed Pork

2 pork chops
1/2 cup brown sugar
1/4 tsp pepper
1/4 tsp cayenne
1/2 tsp garlic salt

-- Heat olive oil in a skillet
-- Mix all ingredients in a bowl
-- Rub both sides of pork with mix, using it all up
-- Cook pork in skillet for about 5 minutes per side until they are brown
-- Drag around in remaining glaze in pan to ensure they are covered
-- Serve and enjoy!

I served it with a side of sauteed kale and an heirloom tomato, mozzarella, onion, basil caprese-ish salad.
