I am always looking for easy, healthy, (most importantly) tasty side dishes to serve with dinner. I always try to incorporate at least one vegetable of some kind and avoid processed carbs if I can. This is super easy, tasty and quick!
I used tomatoes and zucchini because that is what I had in my fridge. I also always have bread crumbs and shredded parmesan on hand. Lots of flavor with little doses.
Ingredients
Shredded parmesan
Bread crumbs
Salt
Pepper
Directions
-- Pre-heat oven to 350.
-- Line a baking sheet with aluminum foil.
-- Thin slice veggies and dip both sides of each slice in a shallow bowl mixed with bread crumbs and S&P to taste.
-- Lightly sprinkle tops of veggies with parmesan.
-- Bake for 12-15 minutes

Yummm! I never even considered Parmesan on them. Definitely trying that.
