I found this recipe on Pinterest via Culinary Couture. And it is melt-in-your-mouth-Taco-Bell-worthy... and I love me some late night Taco Bell, pregnant or not. I had to borrow this picture from Pinterest because mine looked heinous... or I ate it too fast for a picture!

Ingredients
Corn tortillas
Flour tortillas
Lean ground beef (1/2 pound)
Package of taco seasoning
Sour cream (I always used reduced fat)
Shredded Mexican blend cheese
Shredded lettuce
Diced tomato
Directions
-- Pre-heat oven to 400
-- Brown ground beef in a skillet with some EVOO. Add taco seasoning while cooking. Set aside when done.
-- Warm the corn tortillas in oven for a couple of minutes until the are starting to brown and have some crunch
-- Microwave the flour tortillas individually for 10 seconds or so, until they are warm.
-- Lay out the flour tortilla
-- Spoon beef into the center and top with cheese
-- Place the corn tortilla on top
-- Sprinkle lettuce, tomato and a spoonful of sour cream on top of this
-- Starting with the bottom of the flour tortilla, roll the edge up towards the center until all of the filling is enclosed
-- Place seam side down into a skillet
-- Cook for three minutes per side until golden brown
-- ENJOY!

DeleteYUM. taco bell is one of my guiltiest pleasures. But I always end up regretting it later. Why I never thought to make my own, I have no idea.
