Recipe: Roasted Green Beans

One thing I am always searching for are good, healthy vegetable side dishes for dinner.  Leave it to Pinterest to solve that problem!  

I found this delicious roasted green bean recipe from there via Skinnytaste and adapted it a little for our needs.

Ingredients
Green beans, trimmed
Olive oil
Salt & Pepper
Parmesan cheese (I used both grated and shredded)
Garlic powder

Directions
- Preheat oven to 425
- Line baking sheet with tinfoil (for easy clean up)
- Spread green beans on baking sheet
- Cover lightly with olive oil (I use a few teaspoons)
- Sprinkle salt and pepper to taste
- Bake for 20 minutes
- Sprinkle with grated cheese and a pinch of shredded parm (I used a lot more than the original, because it is CHEESE!)

We ate ours with some baked salmon and mashed cauliflower.  I think this recipe will be in heavy rotation here!
