Recipe: White Chicken Chili

This past Saturday we had some friends over for dinner and I had high hopes of trying out some new recipes but the blizzard threw us for a loop and I had to work with what I had in our cabinets and fridge.   Thank you Pinterest for saving the day, as usual.  I have never made chili before but I think it turned out pretty well!  I am still eating it a couple of days later so I think that is a good sign!

1.5 pounds uncooked chicken breast cut into cubes
(2) 15 oz cans white beans
(1) 15 oz can white corn
1 onion chopped (I used a white one)
1 clove garlic, minced
1 package taco seasoning
1 can cream of chicken soup
(1) 14 oz can chicken broth (next time I wouldn't use this much)
Sour cream
Shredded mexican blend cheese

- Place cut up chicken in bottom of crock pot
- Next, place beans, corn and onions on top of chicken
- Mix the garlic, seasoning, soup and broth together then pour over mix in crockpot.
- Cover and cook on low 8-10 hours.  I cooked ours for about 9.
- Before serving, use a potato masher to mash the chili before serving.
- We served ours over rice with a sprinkle of cheese, spoonful of sour cream and some chopped scallions.

Serve and enjoy! This is a perfect snow storm meal!
