After getting some requests for the cauliflower pizza crust I posted yesterday I am posting the recipe we used today! I won't lie, Josh did most of the work on this. We also used some amazing Pizza Oil from Crate and Barrel which they no longer sell -I stocked up with ten bottles though...

Ingredients
1 cup cooked, riced cauliflower
*grind it up in a food processor, but not TOO small and cook it on high in the microwave for 8 minutes and DO NOT ADD WATER
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
Olive oil
Directions
- Preheat oven to 450
- Spray a cookie sheet with nonstick cooking spray
- In a bowl mix together cauliflower, mozzarella and egg. Add in the next three ingredients and stir.
- Transfer to cookie sheet and use your hands to form into a 9 inch round circle
- Brush top with olive oil.
- Bake for 15 minutes.
- Remove, top with sauce, cheese, etc. and broil for 3-4 minutes.
*Also note that one head of cauliflower is about 3 cups.
