Recipe: Honey Mustard Pretzel Chicken

I am always looking for new and delicious chicken recipes and Pinterest is always there for me.  (you're my boy blue!)  I think chicken gets boring and blah super fast and this was so good I would make it again and again!

1- 1 1/2 pounds chicken breast
2 cups pretzel crumbs
1/2 cup olive oil
1/2 cup dijon mustard
1/3 cup honey
1/4 cup water
3 tablespoons red wine vinegar
Salt and pepper
1/2 cup flour, plus more if needed

-  Heat oven to 400.  Grease a large pan (I used a large Pyrex dish and Pam.)
- In a food processor, pulse pretzels until in small crumbs.  I did this until they were basically the consistency of bread crumbs.  Add to a shallow dish. Wipe out your food processor because you are going to need this again.
- Add the oil, honey, water, vinegar and mustard to the food processor and pulse until smooth.  Add in salt and pepper to taste and pulse until combined.
- Pound the chicken breasts with a mallet until thin and season with salt and pepper.  I then sliced them into quarters so they were smaller to work with.
- Pour half of the liquid into a shallow dish, the same with the flour and make sure those pretzel crumbs are nearby!
- Dredge the chicken piece by piece, starting with the flour, then the dressing, and finishing with the pretzel crumbs.  Make sure you let the liquid drip off from the dressing before dipping into the pretzel crumbs.
- Place chicken into baking dish and cover with any leftover crumbs.
- Bake for 20-25 minutes.  Let sit for 5 minutes.
- Serve topped with remaining honey mustard sauce.

So yummy! Enjoy!  I altered it from the Pinterest version I found (which also included breadcrumbs) and will definitely be making this again!
