Recipe: Crockpot Chicken Tacos

After seeing this recipe floating around on Pinterest and trying to menu plan (let's see how successful that actually is, ha!) without going to the grocery store, I decided to give these a try today.  Although the beer is not gluten free, everything else is.  Boo hiss.  Oh well.  We will call it a cheat day right?  I tweaked this a little to our taste so the recipe below is how I actually ended up making it.


Ingredients
4 boneless chicken breasts (I use 8 small tenderloins because that is what I had)
1 can of beer
1.5 teaspoons cumin
1.5 teaspoons garlic powder
1/2 teaspoon cayenne 
1 tablespoon onion salt
1/2 teaspoon black pepper


Directions
- Mix cumin, garlic powder, cayenne, salt and pepper together in a bowl.  Whisk in beer.

- Place chicken in crock pot and pour mixture over.  Cover and cook on low 7-8 hours.

- When chicken is done (I gave ours about 7.5 hours) shred using forks and a tong.

- Serve with taco ingredients and enjoy!


Our taco ingredients were shredded cheddar, shredded cabbage, diced tomatoes, diced red onion, Sriracha and light sour cream.

*also can be enjoyed with a delicious margarita!

  1. Yay for menu planning! Hopefully it will end up making life easier, it definitely has helped me not stress at dinner time. This looks great....crockpot recipes are the best!!

  2. I loved those tacos! They were better the next day! The "beer taste" was not as noticeable the next day!

    1. Ohhhh good to know! I am going to use light beer next time. I think that might help the beer taste too!
