Recipe: Faux Pasta

I have been craving pasta and sausage for a long time but our gluten-free and low-carb diet attempts have put the kibosh on that.  Thinking and thinking... I remember seeing a recipe using zucchini in place of pasta although I have no idea where or what it was.  This recipe is what came of trying to replace my cravings with a low-carb and low fat alternative.  I was pretty pleased and satisfied with the results!  The best part is how fast and easy it was to make! I added a side salad and we were good to go from start to finish in 20 minutes!

Ingredients (serves 2)
2 zucchini
Chicken sausage - I used half of a package
2 tablespoons olive oil
2 cloves garlic, minced
Chicken broth
Salt and pepper to taste
Shredded parmesan

- Slice zucchini into small, long pieces.  This is by far the most time consuming part of this meal!

-Add zucchini to a saute pan.  Fill with enough chicken to broth to almost, but not, cover all of it. Sprinkle in salt and pepper.  Cook on low heat, stirring occasionally until broth is gone.  This takes about 10 minutes total.

- Meanwhile pour olive oil into a pan and heat.  Add in garlic and chicken sausage.  I remove ours from the casing and break apart with a rubber spatula.  Cook over medium to low heat until cooked through.

-  Both the zucchini and sausage should be done in about 10 minutes.  Remember, the zucchini is done as soon as the broth completely evaporates!

- Put zucchini on a plate and top with sausage/garlic mixture.  Sprinkle parmesan cheese on top and serve!
