Healthy Eats

Heyyyy Wednesday, nice to see you so soon!  The last couple of days have been spent with one seriously cranky toddler and a seriously cranky mommy.  I have been stepping up my healthy food game now that I am out of my vacation mindset and am really feeling good!  Here is what I have been eating...

Organic oatmeal with a splash of unsweetened almond milk, raspberries and honey

Salmon, a couple of spoonfuls of quinoa, s&p, and kale massaged with lemon and a splash of olive oil

Fresh watermelon juice and spinach, celery, apple and lime juice

Salmon and green beans baked with lemon, olive oil and s&p and quinoa.  I topped all of this with my Sriracha, relish, mayo combo... pretty much mushed it all up and ate it. Gross looking and awesome tasting!

From this weekend: latte with unsweetened vanilla almond milk, one Splenda (I hate Stevia yuck!) and a tiny bit of Vanilla Extract

 My new favorite lunch: tea and brown rice sushi from Whole Foods.  So filling, low calorie and gluten free!

Green smoothie with spinach, vanilla protein powder, unsweetened almond milk, one small banana and a teaspoon of PB2

From Gwyneth Paltrow's new cookbook: Organic sprout bread toasted with one tablespoon of vegenaise, one avocado, topped with the juice of 1/4 of a lemon and sea salt. 

I am OBSESSED with this avocado toast and think I will be eating it daily.  Gwyneth Paltrow's new cookbook is AWESOME! It is healthy, some vegan and some gluten free, but all easy and delicious!  This is a must order!

  1. Love the clean eats! One of my all-time favorite snacks is Ezekiel toast with avocado, a splash of truffle oil, salt and pepper. Nom nom nom.
