There is something about summer that makes me crave egg salad. Don't get me wrong, I love it any time of the year, but during the summer it just seems so right. I also happen to have a massive love of eggs, especially as my favorite source of protein. I make this lightened up, cleaner egg salad at least once a week for lunch or as a snack. It is quick and easy since I make a pot of hard boiled eggs at the beginning of the week to snack on.
{ Ingredients }
One hardboiled egg + one hardboiled egg white
Diced yellow onion
1 teaspoon Vegenaise
One small handfull pea shoots
Sea Salt & Black Pepper (to taste)
Wrap or bread (I used an Ancient Grains wrap)
{ Directions }
- With a sharp knife and fork diced egg and egg white into very small pieces
- In a small bowl combine eggs with Vegenaise, salt, pepper and onion with a fork
- Mash with fork until desired consistency is reached
- Layer onto wrap or bread and top with pea shoots
- Eat and enjoy!
This is so basic and simple, and sometimes the more basic the more delicious IMHO! What are your favorite summer eats?

ReplyDeleteVegenaise is the bomb.com! I get it at Whole Foods (TJ's doesn't have it) and it is tastes so much better than regular mayo and is much cleaner!
