Loaded Sweet Potatoes


We have been eating a lot more sweet potatoes lately due to their added health benefits over regular potatoes.  However, I have had a hard time finding fun ways to eat them.  I saw a few different recipes on Pinterest and played around until I came up with this.  It was unexpectedly delicious!  

{ Ingredients }

Sweet Potatoes
Pancetta
Olive Oil
Green Onions
Shredded Chicken Breast (I had some pre-made from another meal)
Shredded Cheddar
Spinach
Chicken Broth
Vegenaise
Sriracha



{ Directions }

-  Heat over to 425
-  Scrub potatoes and prick all over with a fork.  Cook on over rack for 45-60 minutes     depending on size of potato.
-  Meanwhile, combine one tablespoon of Vegenaise with one tablespoon of Sriracha and  stir until smooth.
-  Saute pancetta in a tablespoon or two of olive oil until crispy.
-  Saute spinach in a few splashes of chicken broth until wilted.
-  Remove potato from oven when finished and let sit for five minutes.  
-  Cut potato down center and push ends together gently to open.  Top with chicken, diced   onions, pancetta, spinach and cheese.  Drizzle Vegenaise/Sriracha sauce on top and sides.
-  Eat and enjoy!
