Recipe: Healthy Nachos

{  Ingredients  }

1/2 bag of organic, blue corn chips
1/2 can organic black beans, drained
1/4 pound extra lean organic ground beef
Salt and pepper (to taste)
2 cups extra sharp organic cheddar cheese
1 and 1/2 tomatoes, diced
Onions, diced
Shredded lettuce
Cojita cheese
Sour Cream

{  Directions  }

-  Preheat oven to 350
-  In a skillet, heat nonstick cooking spray or olive oil.  When hot (I give it at least two minutes) add beef and brown.  Seasons with salt and pepper.
-  Spread chips evenly in a single layer on a large baking sheet.
-  When beef is brown and cooked almost entirely through place on chips.  Add black beans.  Bake in over for 7-8 minutes.
-  Remove and top with cheddar cheese.  Bake again for no more than 5 minutes.
-  Remove from oven and top with diced tomatoes, shredded lettuce, onions.  Grate Cojita cheese on top.  I just do a thin layer.
-  I place the guac and sour cream on the side for dipping and squirt the Sriracha lightly across the top.

Eat and enjoy!  This meal is one of our go-to dinners because both Josh and I like it and it fills us up.  Plus, we cannot get enough Mexican food!  Can you tell we miss California?!  Happy Tuesday!

    1. Same! Nachos are pretty much my favorite food ever... besides pizza. Not quite as easy to lighten that up ;)
