Healthy Eating

I love eating healthy, but most days it is really hard to do.  I am usually the last one to eat and by the time I do I am starving and ready to shove whatever is closest at hand in my mouth.  If only I had a personal chef.  Just kidding.  Kinda.  I try to keep all of the junk out of our house (not always successfully) and just keep several tried and true healthy favorites on hand.  Clearly, I am no health expert but I love seeing what other people are eating and getting ideas from that for our meals. Here are some of my go-to's lately (and yes, I eat way too many eggs.)

Fried egg, 1/2 an avocado, nitrate free organic turkey bacon

Two scrambled eggs and green juice

Gwyneth Paltrow's roasted cauliflower and chickpeas

 Gluten free pancakes

 Advocare Raw Bar and green juice

I'm pretty basic.  Here are a couple of new recipes I pinned that I want to try.

  1. Yup...I love all of this!! I think my new favorite meal is making mini turkey & veggie meatloaf muffins with oats & egg whites as the binding ingredient. I put them in cupcake wrappers and bake like 20 of them. Serve them for dinner but then I have so many leftover and that's my quick lunch through out the week...because, like you, I'm always the last one to eat but want something quick and healthy!

  2. I eat so many eggs too. I need to steal some of these ideas were trying to eat better around here. I do a lot of Greek yogurt and granola for an easy breakfast
