Taste: Buffalo Chicken Quinoa

This recipe has got to be one of my favorite, easy, big batch go-to lunch recipes.  I can't take credit for it, because my friend Antonia introduced me to it and I have made it almost weekly ever since.  It is so simple and so good!  This pops up on Pinterest a lot too, but this is my personal favorite version.

{  Ingredients  }
1 pound boneless, skinless chicken breasts
Chicken broth
Diced onion
Blue cheese, crumbled (about 1/4 cup)
One cup quinoa, cooked
Shredded carrots
Two tomatoes, diced
One head broccoli, cut into florets
Frank's Red Hot to taste

{  Directions  }
-  Cook quinoa according to instructions and put into a large bowl.
-  Make chicken breast however you prefer: sometimes I slow cook in the crockpot with   chicken broth, other times I bake at 365 for an hour in chicken broth covering it.  After the   chicken is cooked, shred it and add to quinoa.
-  While chicken is cooking boil your broccoli until tender, about seven minutes.  Add to   quinoa.
-  Add to your bowl: diced tomatoes, diced onions (do as much or little as you like), blue   cheese, a large handful of shredded carrots, salt and pepper.
-  Most important part now: add your Frank's.  I like a lot!  I mix everything as I go and taste until there is just the right amount.

As always, it is good to play around with this and see what you do and don't like to add to make it as delicious as possible for you!  This is SO easy and healthy!  It's good to have friends with good recipes!
