Taste: Asparagus and White Bean Soup

Let me preface this post with a disclaimer: Sorry for the stink picture! I cannot get a good shot of this soup for some reason, but it tastes about a million times better than it looks PROMISE!  This is adapted from this recipe!

{  I n g r e d i e n t s  }
1 can asparagus
1 can great northern beans (or any other white bean)
1 yellow or white onion, diced
2 tbsp olive oil
4 cloves of garlic, minced
4 cups vegetable or chicken broth
Salt and pepper to taste
1 pinch red pepper flakes
Fresh squeezed lemon juice to taste
1 tablespoon grated parmesan (per serving)

- In a large pot, heat the olive oil and add onions.  Saute for about five minutes until translucent. 
-  Add the garlic and asparagus and cook for three more minutes.
- Add broth and beans.  Bring to a boil, reduce heat and simmer for 20-25 minutes.
- Add red pepper flakes.
- Puree with an immersion blender or in a blender (remember not to fill it more than halfway because it is hot!)
- Add salt, pepper, lemon juice and parmesan.
-  Enjoy!

This soup is enough for a few days and is both light and filling at the same time.  I have made this weekly lately to have for my lunches. Yum!
