Sorry for the lack of posts this week... we have been traveling and I have been sick... not the easiest combo.  I thought I would pop in and give you a peek into what has been going on while I try to get our Easter weekend together!







We have spent a lot of time in the car lately as you can see.  Have a wonderful Easter weekend!

Workout Wednesday

Do you know what puts a big damper in my attempts at healthy living? Getting sick. Arghhh!  I haven't worked out in three days and have been eating what I can because so many things seem unappetizing.  I hate it.  I'm looking forward to getting back to normal and back on track!

I luckily squeezed in some weekend workouts this weekend before the sick kicked in..
I got this shirt for $4.99 at the Gap when they had 40% off the other day.  Perfect to throw on going to/from the gym!


I have been making tuna salad with a teaspoon of olive oil, a teaspoon of mayo, salt and pepper in the food processor to add to salads for lunch.  I use one can for two days although I think I will double it next time so I have enough for the entire week.

I love my Lululemon yoga mat and so does everyone in our house.  The kids, the animals, everything is on it all of the time and I swear it never gets put away.  I use it whenever I work out at home so I think I have just reached the point of never rolling it up again.


Does anyone have this? Thoughts?

I have this Jillian dvd and hate it.  HATE it.  I don't know why, but I just can't stand to do it.  Any recommendations for when you just can't make it to the gym?

I also got these adjustable weights and they are awesome! They are Reebok brand and are sold at Target.  You can use them from 5 to 15 pounds each.  So handy to have for at home workouts!

Any at home work out tools/tips/etc. you have please share!

Recipe: Chicken and Kale Fried Rice


I have seen a lot of different fried rice recipes on Pinterest and various blogs lately.  I love, love, love chicken fried rice when we get Chinese take out (East Coast Chinese only!) but I hate knowing all of the extra MSG and additional unhealthy ingredients that come with it. Josh isn't a big fan of peas and some of the other items that come in it typically so I made this up using ingredients I know we both like that won't add to our waist lines.


Ingredients
2 boneless chicken breasts
2 tbsps olive oil
5 stems of kale
1 cup dry brown rice
1/4 cup chicken broth (I prefer organic)
2 eggs
1 small bunch scallions
2 cloves garlic or 1 tbsp minced garlic
Salt and pepper
Soy sauce to taste


Directions
- Cook rice according to instructions and set aside.

- Cook chicken breasts.  I prefer to do mine the quick and easy way by boiling them for ten minutes.

- Shred cooked chicken.  I do this in my food processor.

- Pour olive oil in a large saute pant and add garlic over medium heat.  Cook for five minutes.  Add kale and chicken broth and saute for about 7 minutes over low to medium heat until broth is absorbed and kale is wilted.  It won't wilt as much as spinach or other greens so make sure not to burn.  Add more broth if necessary.

- While kale is cooking, scramble both eggs in a separate pan and break into smaller pieces.

- After kale is done add rice, chicken scallions, salt and pepper (I add a large pinch of each) and cook over low heat for 5 minutes, mixing all together.  You may need to cook for less time if your pan is too hot.  Just make sure to eye ball/taste as you go.

- Remove to a bowl and add in eggs, mixing.  Add in soy sauce to taste (we use Bok Choy because it is gluten free.) 

- Serve and enjoy!

I added some Chinese mustard to mine and Sriracha when I ate it as left overs the next day.  If you like spice then try both!

Beauty: Dry Skin Fixes

I'm so over this winter and so is my dry skin.  With a 90 percent chance of snow tomorrow, I thought this would be the appropriate time to share my new favorite dry skin routine.  I pretty much have dry skin year round so I have tried my fair share of products over the years and settled into one for the last couple of years that I have found really works.

This is what I keep in my medecine cabinet.  My Philosophy face wash and Clarisonic are in the shower.  This is my full product run down:


Face Wash
I wash in the evening in the shower with Philosophy Purity face wash and my Clarisonic.  In the morning I use Mario Badescu Glycolic Foaming Cleanser.  Two different ways to exfoliate gently.

Serum
I have tried a ton of different serums but always come back to this super inexpensive and reliable standard: Trader Joe's Vitamin E oil.  I used to slather my belly in this when I was pregnant and have no stretch marks (knock wood.) I put a dime size amount on my skin after I wash both morning and night.  It is super softening and most anti-aging serums contain Vitamin E oil.

Lotion
I use a BB Cream or tinted moisturizer during the day (not shown) and at night put on a small amount of Creme de la Mer.  I hate paying for it.  It literally pains me, however, nothing else works as well as this on my skin.  This is also coming from someone with skin so dry it flakes (ick!)  If you know a less expensive alternative let me know!

Eye Cream
I am obsessed with Amore Pacific's Eye Renewal Cream.  It feels amazing and my under eye concealer goes on so much more smoothly.  I have been using this for years and have yet to buy a full size container of it.  They give it away as samples at Neiman Marcus like crazy and I think I have managed to go three years on samples alone.  I don't think they carry it in most NM's though   - boo!

Miscellaneous
I use Trish McEvoy Beta Hydroxy Pads on my face at night twice a week after washing my face.  You just swipe them on and let dry then continue with your normal routine.  These are a great exfoliator!  On nights when I use these I end my lotion with a few sprays of Amore Pacific's Moisture Bound spray.  It really helps seal in the moisture.

I know this seems like a lot but getting samples of most of these products can go a long way and probably get you through a lot of the winter.  Exfoliation and moisturizing make a world of difference!

Handbag Organization

I love to organize everything, including my handbag... and gym bag, and diaper bag, but those are different stories for another day.  Today it is all about the handbag.  I try to go through it at the end of every week and throw out any trash, lots of accumulated goldfish crumbs, etc.  I just got this adorable Kate Spade bag on super sale (I can't find it on the site anymore though.)


I'm all about the hands free thing these days.  I need my hands available for children, dogs and diaper bags.  As I was filling her up today, I thought I would share my bag organization style, and also because I am super nosy and love when other people share what's in their bags.

I always have my wallet (obviously), a small Vera Bradley card case with cards that don't fit into my wallet, baby wipes (great for a million things), sunnies, two Baggu bags (never know when you will need a reusable bag!) and my cosmetics bag.

I use the term cosmetics bag loosely.  It is really a mish mosh of lip glosses, a pen, hand sanitizer, hair bands, mints, cuticle cream (we go on a lot of long car trips and this is amusing) and a small mirror.


I tend to pick things that are square shaped on purpose so I can arrange them in my bag like a puzzle.  I am so OCD, but it makes me so happy looking in!

There are two things that I LOVE to do: workout and shop!  Today, let's combine them!  If I had an unlimited budget I would probably visit Lululemon daily, but for now, I will just pick and choose...

Recipe: Cauliflower Pizza Crust

After getting some requests for the cauliflower pizza crust I posted yesterday I am posting the recipe we used today!  I won't lie, Josh did most of the work on this.  We also used some amazing Pizza Oil from Crate and Barrel which they no longer sell -I stocked up with ten bottles though...

Ingredients
1 cup cooked, riced cauliflower 
*grind it up in a food processor, but not TOO small and cook it on high in the microwave for 8 minutes and DO NOT ADD WATER
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
Olive oil


Directions
- Preheat oven to 450
- Spray a cookie sheet with nonstick cooking spray
- In a bowl mix together cauliflower, mozzarella and egg.  Add in the next three ingredients and stir.
- Transfer to cookie sheet and use your hands to form into a 9 inch round circle
- Brush top with olive oil.
- Bake for 15 minutes.
- Remove, top with sauce, cheese, etc. and broil for 3-4 minutes.  



*Also note that one head of cauliflower is about 3 cups.

Weekend Recap

Happy Monday!  How was everyone's weekend? We had a good one! We relaxed with some friends and the kiddos and avoided going out into the way too cold weather.  I also kind of forgot all about it being St. Patrick's Day.  Fail.  Oh well, there is always next year!

On Saturday I made The Pioneer Woman's Pot Roast that I read about on Kathleen's blog and it was so easy and delicious!
It was also totally gluten free!  We are on a wheat free kick right now.  Don't ask.

I watched some basketball and that is all I am going to say about that.

We had a small (delicious) reminder of the holiday...

Played Cards Against Humanity, quite possibly the most hilarious game ever...

And made a cauliflower crust pizza! Josh made it (shocker!) and it was so yummy and filling! I didn't even miss regular pizza crust!

I am guessing that this post means my entire weekend revolved around food.  As usual!
