Workout Wednesday

Ahhh it's Wednesday.  Time to talk about workouts.  Clearly, I have been MIA on this topic for (ahem) quite some time.  But not for bad reasons!  A few weeks ago I started the Advocare 24 Day Challenge after seeing all of Lauren's AMAZING results.  Clearly, everything I had been doing for the last year wasn't working for me.  I haven't done any "after" pictures yet, just "befores" and I am still going but I thought I would share the results I have had.


I have lost seven pounds and four inches total this past month.  It hasn't been too hard or too easy.I have given up (gasp) coffee.. for the most part.  I have a TON more energy... to the point that I am awake late at night and up early - and not falling asleep on the couch.  I would say that I eat clean 75 percent of the time.  I have learned to control my indulgences better.  I keep track of my water intake, take my supplements, work out less but more consistently and try to keep my alcohol drinking to weekends only.  I'm not saying this is the right way, but for me it has been the best thing I could do.   I am finally on the path to getting back to pre-baby weight and, more importantly, I feel a million times better and have a significant increase in my energy - a necessity for me.  I am off to an early morning gym sesh now!  Any and all tips/advice are always recommended!

Recipe: Healthy Nachos



{  Ingredients  }

1/2 bag of organic, blue corn chips
1/2 can organic black beans, drained
1/4 pound extra lean organic ground beef
Salt and pepper (to taste)
2 cups extra sharp organic cheddar cheese
1 and 1/2 tomatoes, diced
Onions, diced
Shredded lettuce
Cojita cheese
Srirach
Sour Cream
Guacamole


{  Directions  }

-  Preheat oven to 350
-  In a skillet, heat nonstick cooking spray or olive oil.  When hot (I give it at least two minutes) add beef and brown.  Seasons with salt and pepper.
-  Spread chips evenly in a single layer on a large baking sheet.
-  When beef is brown and cooked almost entirely through place on chips.  Add black beans.  Bake in over for 7-8 minutes.
-  Remove and top with cheddar cheese.  Bake again for no more than 5 minutes.
-  Remove from oven and top with diced tomatoes, shredded lettuce, onions.  Grate Cojita cheese on top.  I just do a thin layer.
-  I place the guac and sour cream on the side for dipping and squirt the Sriracha lightly across the top.

Eat and enjoy!  This meal is one of our go-to dinners because both Josh and I like it and it fills us up.  Plus, we cannot get enough Mexican food!  Can you tell we miss California?!  Happy Tuesday!

Cape Cod Weekend

Happy Monday everyone!  I hope everyone had a fabulous weekend! I had a girl's weekend away in Cape Cod with two of my girlfriends and it was perfection!  

We hit the beach...


Stuffed our faces...

Enjoyed some delicious muddled berry champagne cocktails while the sun went down...


Sipped some delicious, beach-appropriate vino...


Watched Sharknado purely because it was on and it is SHARKNADO...


Hit up the cutest Christmas Tree Shop ever...


and sipped a few Marylou's coffees!

Lessons learned:

*  80 degrees is THE perfect beach temperature. Hands down.
*  I discovered some delicious new recipes that I need to make.  Yum!
*  Also discovered a delicious new way to enjoy Prosecco AND a tasty new Sauvignon Blanc (see above!)
*  Sharknado is the worst movie. Ever.
*  Iced Hazelnut coffee with soy milk and a touch of sugar is the most delicious way to enjoy coffee.
*  I overuse the word delicious.

Summer

If you follow me on Instagram, then this isn't new to you.  However, it perfectly sums up my week. 


It was too hot to go outside last week and now it feels like Fall temperatures and have Avery "too cold" to go outside.  What to do!?! 
...

I have also been a raging insomniac lately so I decided to try Dream Water.  I tossed and turned worse than ever.  Ugh!  Next up, melatonin?!

...

I made some homemade marinara sauce the other day.  It was super easy and healthy to make and I feel like there are so many delicious ways to tweak it.  We rarely eat Italian food at our house (oh hey gluten) so I feel like this is all new to me!

...

Greyson has been a HANDFUL this week.  With 18 months come big changes.  He is now refusing to sit in a high chair and insisting on sitting in a real chair.  I foresee very few meals out in our near future.

...

Avery is taking her big sister role very seriously lately.  She loves to push Greyson in his stroller.  He hates being in a stroller but is also a total lunatic when I let him free so I think I"ll just let her deal with him...

...

Greyson has also learned to make demands and climb in and out of the car.  Where is my wine!?

Can you tell it has been a crazy week?!

Burlap and Wood Initial Art

I have been working hard at trying to make our play room more "together."  I'm thinking this is one of those rooms that will never feel done even though it is probably the most used room in our house.  It is the first place we go in the morning and we have to walk through it to get to the kitchen.  My OCD is making it so much worse because toys have got to be the HARDEST thing to organize/make look presentable. Ever.  Period.  So I have taken a break from my organization to try to fluff the room and give it some decorative accents.  

I saw this pin and it gave me an idea on how to put the kids' stamp on the room.

{  What You Will Need  }
Burlap (at least 8 inches wides)
Glue gun
8x10 or up picture frame
Wooden letter
Acrylic paint



{  What To Do  }

1.  Remove everything from the picture frame.  Use the backing of your frame to measure and cut your burlap to size.  I had a roll of vinyl backed burlap I had previously purchased.  I used packing tape to hold it to the frame backing and trimmed it with scissors pretty roughly since I knew the frame would hide a couple of the outer inches.



2.  Smooth your burlap down.  Since mine came on a roll (and I am assuming most will) I put it under a stack of heavy books over night.  Otherwise that bad boy would have just curled right back up.



3.  After you cut your burlap put a coat of paint on your wooden letter/s.  I used a color I already had a foam brush and a regular small paintbrush to get full coverage.  I let it dry overnight than touched it up the next day.



4. Take your glue gun and get glue all over the back of your picture frame.  Attack your burlap to it and weigh down with some books again for a few minutes until it is dry.  Then place into the frame without the glass.



5.  Get lots of glue from your glue gun on the back of your letter, center it and attach to the burlap.  I, yet again, went with a stack of heavy books on top of the letter to make sure it was good and secure.



6.  Hang and enjoy!



This was SO easy to do and I am sure you probably have more supplies on hand than you think for this!  Here is their current home in our play room:


Avery has assigned herself head of bulletin board decorating... so I just go with it.

Easy Protein Pancakes



I used this recipe which I found on good old Pinterest.   This recipe is SUPER easy and one I make a couple of times a week.  It gives a great combo of protein and complex carbs to get your day started!

{  Ingredients  }
makes 2 pancakes
2 egg whites
1/2 cup uncooked oatmeal
1/2 banana
1/2 teaspoon vanilla extract




{  Directions  }
-  Combine all ingredients and blend until smooth in a blender
-  Heat a skillet and spray with nonstick cooking spray
-  Pour half of mixture onto skillet and cook
-  Flip after two minutes, cook for an additional two
-  Remove from heat, cook remaining half
-  Eat and enjoy!

I like to eat mine with the tiniest bit of butter and sugar free syrup with a small serving of fruit.

Weekend Recap

Happy Monday!  We had a busy weekend!  We started it early on Thursday with a date night.  I love finding our favorite LA restaurants in NYC.  Usually they are chains and I am 150% okay with that.  I wore an Express tank, Forever 21 shorts and my House of Harlow necklace.

I had to give the kiddos a bath before we left and seeing them playing in the tub together always cracks me up.  They look like two little heads floating around.  
 ...

I found this picture of Avery and I that was taken when she was a few days old.  All of these Flashback Fridays have be digging through pictures I haven't seen in way too long.  Makes me sad to think how fast time goes.  
...

On Saturday we went to one of Greyson's friends 1st birthday party.  It was SO fun and tired the kids out! Perfect combo!
...

On Sunday we took the kids to see the Phillies play the Mets at Citi Field.  This was Greyson's first baseball game and we learned that they are definitely a handful with him.


...

After (during) the game I may have gone a little off the rails and ate like the world was coming to an end.  Back at it today!  I will leave you with what we found after we got home Sunday night.  My child can climb like it is no one's business.  I'm in trouble with this one!

Shopaholic

Why oh why do I not have an unlimited budget to buy everything I want for myself, my kids and our house?  Because that would just be no fun! ... right ...  My online shopping has escalated this week with the temperatures because too hot to go outside should equate to sitting in the AC browsing my favorite online stores.  In lieu of that, some of these babies may just be on their way to me.  I"ll just let you guess which ones...

Easy Egg Salad




There is something about summer that makes me crave egg salad.  Don't get me wrong, I love it any time of the year, but during the summer it just seems so right.  I also happen to have a massive love of eggs, especially as my favorite source of protein.  I make this lightened up, cleaner egg salad at least once a week for lunch or as a snack.  It is quick and easy since I make a pot of hard boiled eggs at the beginning of the week to snack on.  


{ Ingredients }
One hardboiled egg + one hardboiled egg white
Diced yellow onion
1 teaspoon Vegenaise
One small handfull pea shoots
Sea Salt & Black Pepper (to taste)
Wrap or bread (I used an Ancient Grains wrap)

{ Directions }
-  With a sharp knife and fork diced egg and egg white into very small pieces
-  In a small bowl combine eggs with Vegenaise, salt, pepper and onion with a fork
-  Mash with fork until desired consistency is reached
-  Layer onto wrap or bread and top with pea shoots
-  Eat and enjoy!



This is so basic and simple, and sometimes the more basic the more delicious IMHO!  What are your favorite summer eats?
