Life: Weekend Recap

I am so lame lately.  I was dragging all week and all I can do to explain is share what has been going on in pictures.  We have been cooking a ton, playing a lot while the weather is still delicious, and rearranging our entire house (practically.)  But more on that later...

Healthy Eating

I love eating healthy, but most days it is really hard to do.  I am usually the last one to eat and by the time I do I am starving and ready to shove whatever is closest at hand in my mouth.  If only I had a personal chef.  Just kidding.  Kinda.  I try to keep all of the junk out of our house (not always successfully) and just keep several tried and true healthy favorites on hand.  Clearly, I am no health expert but I love seeing what other people are eating and getting ideas from that for our meals. Here are some of my go-to's lately (and yes, I eat way too many eggs.)


Fried egg, 1/2 an avocado, nitrate free organic turkey bacon


Two scrambled eggs and green juice


Gwyneth Paltrow's roasted cauliflower and chickpeas


 Gluten free pancakes


 Advocare Raw Bar and green juice

I'm pretty basic.  Here are a couple of new recipes I pinned that I want to try.

DIY: Mini Bulletin Boards

Sometimes the simplest things give the greatest rewards.  As usual, this DIY came about thanks to some intense Pinterest browsing.  We have an end cabinet in the middle of our cabinet, well a few, but that's another story for another day.  This end bothered me.  I also wanted somewhere to hang important notes, pictures, etc. without sticking everything on our fridge.  I happened to have some super cheap Ikea trivets that I never used and was going to toss, extra clips (which never got used. YET.) and white acrylic craft paint.  All necessary supplies to have on hand, obviously.


So this is where it gets even easier.  Seriously.  I painted the trivets with the paint.  I gave them three coats of paint.



Then, when they were dry, I hung them up!


I used Command Hanging Strips which I am obsessed with lately.  I move stuff around too often for nonstop nailing and filling holes in the wall.


I have been using this nonstop.  It is right next to our little "in" basket on our kitchen counter and between that and these it has really helped keep the clutter down and move important items to where they can be seen.

Did you hear I like pink?  I am like my almost five year old daughter but in the body of someone much older who probably shouldn't love pink like Elle Woods.  (In my most mature voice) I think it is one of the most universally flattering colors because there are so many shades and something for every hair color and skin tone.  When I am shopping I always gravitate towards pink, particularly light pinks.  I love romantic tones.  I love all of these goodies! There's a little something for everyone!

Life: Weekend Recap

Happy Monday lovelies! I am so happy it is Monday it's not normal.  When we aren't jam packed on a weekend or traveling I just count down the minutes until Monday.  I crave routine.  I'm a total weirdo.  Anywho, we started our weekend with a little anniversary celebration on Thursday night with our favorite little people in tow.  Nothing like a little sushi date for four!  
Best part (besides the food) is always delicious wine.  Oh how I love you wine.  And no, my child didn't eat sushi, just rice and chicken, but he went to town with those chop sticks.  It was like 100 degrees out all day and this is what I wore.  Bad choice.


The next day I went to a baby shower (full of gluten free goodies!)  and the kiddos had some serious daddy quality time.


To finish off the evening, we went to the grocery store.  Because that is how you get crazy on a Saturday night with little ones.  Real life.  Basically, I try to only shop when I know the store won't be crowded and we can't cause a scene.  


Sunday was a wash.  I think I am getting sick (ugh) and didn't feel like doing anything except counting down until Monday.  I did make a giant salad though, so there was that.


Best part of my whole weekend?  Finding this selfie of my kiddos on my photo stream.

Taste: Shrimp Enchiladas


If you know me or have been reading this little blog for a while, then you know that if I had to choose any food to eat it would always be Mexican.  We eat Mexican food at least twice a week in our house and in our heads we still live in SoCal and celebrate Taco Tuesday on the regular.  As delicious as Mexican food is, it can also be so heavy and calorie-laden.  This was my take on enchiladas, lightened up a little and gluten-free!








{ I n g r e d i e n t s }
8 small corn tortillas - I used Mission in the lowest calorie I could find
1/4 pound of shrimp peeled, tails removed and chopped into small pieces
1/2 bag coleslaw mix (from the salad section)
1 or 2 large handfuls spinach
1 can organic enchilada sauce - read the ingredients to find a clean/g-free one!
1 1/2 cup shredded light Mexican cheese blend 
4 tablespoons olive oil, divided
1 tomato, diced
Salt and pepper to taste

{ D i r e c t i o n s }
- Preheat oven to 350
- In a skillet, heat two tablespoons olive oil over medium heat.  Do the same in a second skillet
- Add coleslaw and spinach to first skillet and cook, stirring occasionally until all items are starting to wilt, no more than five minutes.  Add 1/4 can enchilada sauce, stir and turn off heat.
- In second skillet, add shrimp and cook until pink throughout about seven minutes.
-  Take a tortilla, layer a sprinkle of cheese on the bottom, a teaspoon full of vegetables, then a small serving of shrimp.
- Roll tortilla and place seam side down into a pyrex baking dish.
- Continue with all tortillas.  If you have any stuffing left, I put it around the edges in the dish.  You should have about half of your cheese remaining.
-  Pour remainder of enchilada sauce over everything in the dish.
-  Bake in over for 10-12 minutes or until edges of tortillas are starting to brown. 
-  Remove from oven and immediately top with remaining cheese.  It should melt from the heat, if not, place in the oven again for a minute or two.
-  Top everything with diced tomatoes and serve!  


I couldn't get a good picture, so please excuse the odd heading picture and after pictures.  I think a photography class or two is in my near future, as is some serious kitchen lighting/curtain adjustment.

Life: Anniversary

Happy Thursday tootsies!

Let me start this off with a shout out to my number one homie, my husband of four years.  What's that? Oh yes, today is our anniversary and we are four years deep.  Rolling in the deep.  Without a babysitter or family nearby this anniversary won't be a big to-do, but it's still a pretty awesome day because I can pull out our over-priced, rarely-looked at, but obviously beloved wedding album.  I can also reminisce on how I spent the majority of the night telling everyone just how pretty I thought I looked.  Not narcissistic at all, nope.  Good thing I don't act/think like that on the daily.  Ah, but good times were had.  Good times were had.  (repeat that last line suuuuper slowly.  It sounds cooler.)




Why can't I wear a frilly, full, confection of a dress weekly, if not monthly?  Seriously folks, once in this bad boy is not enough.  I miss having everyone I love in one room, tipsy on champagne, boogying down to all of my favorite tunes.  I miss that night.  I miss my dress.  I miss my sweet spray tan, because let's be honest, what reason do I have to get one these days? (oh wait, I live in New Jersey...)  Luckily, the one thing I don't  have to miss is my awesome husband!  Speaking of pretty dresses, how about these two beauties I spotted in my celebrity stalking internet browsing this week?




Drooling over both looks.  That sparkly dress screams party princess while the dreamy pink tulle is just heavenly.  Now if you will excuse me while I go do really important things that do not include digging out my dress and twirling around in it like I'm a princess.
