Taste: Egg Muffins

There is nothing I love more than an easy recipe that I make in large quantities for future meals.  I have seen so many versions of egg muffins on Pinterest and blogs and decided to try my hand at them.  I used what I had on hand for this.  You could easily substitute or add in different meats and vegetables.  This is a great way to make breakfast for the week and use up veggies in the refrigerator.  

  • Two handfuls of spinach, chopped
  • All natural turkey sausage, cooked and sliced small (I used six small)
  • Two cups egg whites plus two eggs
  • Pinches of salt and pepper

  • Preheat oven to 365
  • Mix egg white and eggs with salt and pepper until well blended.
  • Spray muffin tins (I need new ones!) with nonstick cooking spray
  • Layer spinach on bottom of muffin tins.
  • Add sausage on top of spinach
  • Top with eggs
  • Bake for 30 to 35 minutes or until eggs cooked through

I topped mine with Trader Joe's fresh salsa daily and ate these all last week.  I'm planning on making another batch when I get new muffin tins!

    1. I found this random local brand of all natural turkey sausage, but I think ground turkey would work just as well! xoxoxo

  3. I always mean to make these at the start of the week and never get to it...this is motivating me again, they look so good!!

    1. I was shocked I actually did it, but it was so fast and easy! If I can do it, than you definitely can!

  4. YUM! I made a batch of gluten free muffins (with a peanut butter base instead of flour) on Monday and have loved having them all week for breakfasts and snacks! I definitely might have to try the egg muffins next!
