Baked Garlic Shrimp

One of my favorite recipes ever is Ina's baked garlic shrimp scampi.  My best friend introduced me to it, and it is seriously one of my top five meals.  I was looking for a similar and lighter take on it without pasta and found a recipe on Pinterest that I used with a couple of tweaks.  It was quick and easy to make and super tasty!  This was enough for Josh and I but could easily be split three or four ways if served with pasta or additional sides.  It isn't the prettiest recipe, but it makes up for it in flavor!

2 cups shrimp, peeled and deveined
1/4 cup white onion, diced
2 tablespoons butter melted
6 - 8 cloves garlic, minced (depends on how garlicy you like it.  We used 8!)
1/4 cup panko bread crumbs (we used gluten free)
Juice of 1 lemon
3 tablespoons parsley, diced

- Preheat oven to 425
- Spread shrimp in an even layer across bottom of baking dish
- In a bowl mix onion, butter, garlic, bread crumbs, parsley and lemon with fork
- Spread mixture across top of shrimp
- Bake 15-18 minutes until shrimp are pink and top is browned

  2. Delish! I have a similar recipe but with loads more butter. With bikini season RIGHT around the corner...momma needs to make this instead! :)

    1. I need to find a way to make it without any more butter booo but summer IS coming!
