Creamy Crockpot Tomato Soup

Let me preface this recipe with the reason why I had tomato soup on the brain:  Last week at Avery's school we all went in to celebrate Mother's Day.  All of the children read a description about their mother and we had to guess who it was.  Avery's description about me included how much we like to go to Nordstrom Cafe and eat tomato soup.  And, yes, she actually ate an entire bowl of this for dinner, which is a huge win for me!  I got the recipe here and altered it a tiny bit to make it my own and using what I had on hand.

1 cup carrots, diced
1 cup celery, diced
1 cup white onion, diced
2 tablespoons olive oil
28 oz can. pureed tomatoes
1 tsp basil
3 1/2 cups chicken broth
1 bay leaf
2 tablespoons butter
2 tablespoons flour (I used Cup 4 Cup to keep it gfree)
1 3/4 cup milk, warmed
Salt and pepper to taste
Shredded parmesan to taste

- Heat olive oil in a skillet.  Add carrots, celery and onion.  Cook over medium heat for about five minutes, until soft.
- Transfer to crock pot.  Add tomatoes, chicken broth, basil, bay leaf, salt and pepper.  Cover and cook on low for six hours.
- Blend soup (I used my Vitamix) and return to crockpot.
- In a skillet, heat butter.  When melted add flour and whisk constantly until well blended.
- Whisk in about one cup of the soup and warm milk slowly, whisking until well blended.
- Transfer mixture back to crockpot and mix all together.  Cover and cook for 30 more minutes.
- Serve with parmesan grated on the top.



  1. Sounds delish!!! I love tomato soup - we actually make the Vitamix recipe for it and blend it on high for 6 min (I think) and it's yummy too!! :)

  4. This sounds delicious! Tomato soup and grilled cheese is one of my all time favorite meals :) Comfort food at its finest!
