Creamy Mung Bean Fettucine

This recipe is quickly becoming one of my favorites!  I actually got the sauce recipe off the back of the mung bean noodle packaging - and it is easy and delicious.  It is gluten free (as long as you use gluten free flour) healthy and filling.  You can use whatever vegetables and protein in it, I just listed what we use. 

Ingredients
One package mung bean fettucine
Two cups mushrooms, diced
Four chicken sausage, cooked and diced
One package cherry tomatoes, halved
4 tablespoons butter
2 tablespoons flour (I used Cup4Cup so it is gfree)
2 cups milk
4 tablespoons pesto
Salt and pepper
1/4 cup Parmesan cheese

Directions
- Cook mung bean pasta according to directions
- While pasta is cooking, melt butter in a saucepan over medium heat.
- Remove from heat, add in flour and stir until becomes smooth
- Slowly add the milk and mix, returning to a low flame, stirring
- Add in cheese, salt and pepper and allow to thicken (this will be about five minutes, watch it carefully!)
- Mix noodles, tomatoes, mushrooms, sausage and sauce in a giant bowl
- Eat and enjoy!

  3. I've never heard of mung bean fettuccine but with the addition of mushrooms my hubby will devour this!
