Meal Plan Monday

Happy Monday everyone!  I hope everyone had a great weekend! We definitely did! I have been trying really hard to be better about meal planning on Sundays for the week ahead.  It's not always easy to stick to, but it makes feeding our family so much easier and makes for less little trips to the store during the week.  I was thinking about posting what we have been eating/will be eating.  What are your thoughts on that? Interested? Not interested?  I figured I would give it a try this week based on last week's menu and go from there!

Monday
Pork tenderloin with scallion relish (a Weight Watchers recipe - I can post if interested!!) leftover coleslaw and potato salad from Memorial Day weekend


Tuesday
Kale and mushroom caesar salad

Wednesday 
Quinoa, spinach, tomato, ground chicken salad with homemade lemon vinaigrette
*This isn't a typical family dinner.  Josh wasn't home so I made something only I would like ;)

Thursday
*This was actually leftovers I had frozen

 Friday
Beef tacos and corn with creamy sriracha (sour cream and sriracha. So good!)

Lunches
I was on a KICK with this salad all week.  I tend to make my lunch in batches so I can have enough for several days at a time.  This is kale, mushrooms, diced onion, chopped hardboiled egg, and dressing made out of olive oil, lemon juice, s & p and red pepper flakes (the NY Times Tuscan Kale salad style) and shredded parm.  It's tasty, easy and filling.

  3. All that looks delicious and I love that the salad for dinner means you were home with no hubby because that's the only time I only get a salad for dinner too!!!
