Eats: Quinoa Breakfast Bowls

I started making this breakfast when we were on vacation this past April and only had a few items on hand.  It was so yummy, I have kept on making it!  The kids actually ate some (like I say, always a win) and it filled me up and kept me energized until lunch!  P.S. It's ridiculously easy!


Ingredients
- 1/2 cup cooked quinoa
- 1/2 cup vanilla greek yogurt (I use 0%)
- Strawberries and bananas diced
- Blueberries
- Juice of 1/2 small lemon ( or 1/4 large)
- 1 tablespoon honey drizzled
- 1 tablespoon slivered almonds

Directions
- Put yogurt in bottom of bowl and top with quinoa
- Toss fruit in a bowl and top with lemon juice.  Add on top of quinoa and yogurt
- Top with slivered almonds and drizzle of honey

Eat and enjoy!

  1. This sounds delicious! I'll need to try it! I don't like the texture of quinoa for breakfast, but mixed with the smooth yogurt should make it better.

  2. I would have never thought to mix quinoa and yogurt but that might actually not be too bad! Definitely a healthy breakfast!

  6. I really like quinoa. I've been buying an oatmeal and quinoa blend and I'm obsessed with it! I've had it everyday for breakfast for the last 2 weeks.
