Thoughts for Thursday: Creamy Pancetta Pasta

Happy Thursday lovelies!  I'm linking up with Annie and Nat for Thoughts for Thursday!

This week it is all about food, including a new favorite recipe and my lack of food...

So I did the three day Blueprint Cleanse last week.  I was ok until the very end of the third day when I started to feel like death.  I'm not sure I'll do a juice cleanse again because the next day I was so starved I was eating everything I could find.  Not my proudest moment.  

On a healthier note, I have been making this new pasta dish and loving it! I tweaked it a little bit after a couple of tries to make it something we would all eat... for the most part.  

Creamy Lemon Pancetta Pasta

1/2 box spaghetti (we use quinoa pasta)
1/2 pint cherry tomatoes, halved
2 tablespoons butter
1 shallot, diced
1 teaspoon olive oil plus more
1/2 package pancetta
1 clove garlic, minced
1/4 cup cream
1/4 cup parmesan
Juice of one lemon
Salt and Pepper

- Cook pasta according to box
- Heat olive oil over medium heat in a skillet.  Add pancetta when hot, and cook, making sure to stir, for about 5 minutes, until browned and crispy.
- Meanwhile, heat butter in a saute pan over medium heat, when melted, add garlic and shallot.  Cook until transluscent, 3-5 minutes.  Do not burn!
- Add cream, salt and pepper, lemon and parmesan, reduce heat to low, and stir until thickened.  
- Remove from heat and mix everything together in a bowl.  I add a bit more olive oil to the noodles to keep them from sticking and spread the sauce a bit more.  Add tomatoes and shaved parmesan to top

Eat and enjoy!

  3. OMG yum! I know what I'm making for dinner on Friday night now! I've always wondered how people do a cleanse. If I did one the second I was allowed to eat again I would eat EVERYTHING in sight. And if I didn't have any food I'd be hitting up the closest fast food place and ordering everything off the menu!

  5. That pasta dish looks so good! I'd be the same way about cleanses. So starved from doing it, you totally make up for it the next day and never end up losing weight! I've read a few times they aren't worth it anyways, probably for the same reasons it didn't work out for you!

  8. I don't think I could do a juice cleanse. I become totally hangry if I don't eat food on a regular basis and I fear for the safety of my husband! ;)

  10. My kids loves pasta, so I meed to try this. I have been getting the itch to do a cleanse, but I would have to have some solid food!

  12. Eeekkk- always wanted to do a juice cleanse but I really don't think i can! I do the two day Dr. Oz one every year which isn't too bad....

  13. I don't think I could go through with a juice cleanse. I've been wanting to try one but then when I think of not being able to eat for a few days I freak out. I just love my food way too much!

  14. Hah so me - we went right from a 5 day juice (insanely difficult) to a full blown pasta smorgasboard. Gotta keep it real ;)

  15. Im glad you said that about the cleanse because I have been heavily debating on try it out. I know I would be the same way and eat everything after it was done. Did you end up losing any noticeable weight? Were there any benefits?

  16. I want to make this for dinner! So good! I'm not sure I could ever do a cleanse... I get hangry if I miss one meal!

  17. I did my first cleanse last summer - Suja Juice cleanse- and felt that way on the 2nd day. I'm overly dramatic at times and I just couldn't handle being able to actually eat food. I have to admit I felt good overall once I was done and I could definitely do it again BUT allowing myself to have a piece of fruit every now and again.

  18. Hi Lindsay! I get major cranky every time I try a cleanse or anything like it. It's kinda funny actually. I wish it could work for me!! Anyway---that pasta sure does look yummy..thanks for the recipe!!
