Peanut Butter Chocolate Chip Bites

When I stumbled upon this recipe I thought the idea behind it was great, but the flavor couldn't be there.  When I had the urge to bake and not enough ingredients for a lot of other recipes the other night, I decided to give these a try.  I was more than pleasantly surprised!  These are delicious and the texture is great for a bean-based food!  They are high in protein and fiber and gluten-free.  My husband ate them and my kids ate them - both a big win in my book!  Plus, they were easy to make and even easier to eat!

1 and 1/4 cups chickpeas, rinsed and dried
2 teaspoons vanilla extract
1/2 cup and 2 tablespoons natural peanut or other nut butter, room temperature
1/4 cup honey or agave
1 teaspoon baking powder
Pinch of salt if using unsalted nut butter
Chocolate chips

- Preheat oven to 350
- Combine all ingredients, except chocolate chips, in a food processor and pulse until smooth.
- Add chocolate chips and pulse a couple of times until mixed in
- Wet hands and form batter into 1 and 1/2 inch balls.  Place on parchment paper on a baking sheet 
- Bake for 10 minutes
- Let cool for 10 - 15 minutes before eating
- These can be store in an airtight container in the refrigerator for about a week
