Holidays: Pumpkin Muffins

Happy Tuesday!   Halloween has me on a complete pumpkin everything kick every year (as I sip a pumpkin spice coffee typing this!)  Pumpkin muffins are one of my easiest ways to get that fix! I tried this recipe last year and was reminded of it when Natalie post it again recently.  I changed it up a little over the last couple of times making it to make it to our taste, including adding a little more sugar and some cinnamon.  Every bite gets me more excited for the 31st!  I also changed it to make it gluten free (Cup4Cup flour!)

Pumpkin Spice Muffins
recipe adapted via

1.5 cups flour (I used Cup4Cup to make it gluten free)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1 cup canned pumpkin (NOT pumpkin pie filling!)
1/3 cup vegetable oil
2 eggs
1 1/2 cups sugar
2 tablespoons cinnamon and sugar mixed together

- Preheat oven to 350 and lined muffin tins with 12 liners.
- In a bowl, mix together flour, baking powder, baking soda, salt, pumpkin pie spice and cinnamon
- In a second bowl, mix together pumpkin, eggs, oil and sugar.  Add dry ingredients and mix well until evenly combined.
- Evenly divide among 12 muffin cups.
- Bake for 20 minutes or until toothpick inserted comes out clean
- Let cool for five minutes then sprinkle cinnamon sugar mixture on top and continue cooling.

We eat ours with whipped cream and it is DELICIOUS!

  10. Ooooh pumpkin muffins are one of my faves! I love doing the shortcut recipe with the spice cake mix and the canned pumpkin! These look so yummy - and I never thought about topping them with whipped cream: genius!

  17. Love pumpkin muffins...well pumpkin everything! I should try adding some pumpkin spice to my recipe. I also make mine gluten free but haven't tried the Cup4Cup flour yet, I use another brand of All Purpose GF Baking Flour I get at the grocery store. I hear it works really well though.
