Vacation Recap

Happy Monday my lovelies!  I'm homeeeee and back with a recap of our last two weeks of traveling.  Two weeks is a long time with a couple of kiddos!  I'm so grateful we get to take these awesome trips, but I can't lie, this mama gets tired!  A nice tan and happy babes makes up for it!  This is picture heavy (be warned!) but let's get to it...

I can't lie, nothing gives me more anxiety than flying alone with the kids.  They are pretty well behaved, but the idea of a meltdown and the fact that they seem to only speak at a volume of full blast along with a tendency to get into slapping fights makes me need a Xanax.  They were great though!

They spent a LOT of time playing together and getting along...

While Greyson hammed it up for me left and right...

Avery refused to let me take any pictures of her because she took daily swimming lessons and finally overcame her fear of the water and turned into a full blown fish.


I may have needed a daily cocktail.  Boo agreed with me.



 We went on an awesome dolphin-watching sunset boat ride which was a big highlight of our trip (after the tears dried.)

Avery woke up the first morning with her first loose tooth.  I almost burst into tears.  Why does time go so fast?

And I tried to get a good picture of me and the kiddos.  This was the best one.  Greyson was trying to throw himself out of my arms and pinching me.  Avery nailed it, though!

I tried to pack as lightly as possible and re-wore things - we were lucky enough to have a washer and dryer where we stayed.  Nobody needs to be packing ten suitcases and traveling with kids!

Summer Uniform

Ok you guys, this is my official summer uniform.  Last year, it was all about the JCrew chino shorts.  This year, it's all about cut off's.  These shorts are so darn comfortable I could sleep in them. Target has been killing it with the easy tanks - scoop up a bunch, you'll have them for years and the price can't be beat!  I'm also so happy I snagged this necklace at Nordstrom because it goes with everything.  So if you see me, I'll more than likely be in some variation of this!

White Bean and Chicken Chili

It's no secret that I am a huge fan of Cheesecake Factory.  I have a love/hate relationship with chain restaurant, but the CF has always got my back.  Their Skinnylicious menu also makes me very happy - and it will you too, after you read the nutritional information from their regular menu.  #holycaloriesbatman  I almost order the Skinnylicious White Chicken Chili when I go and when I saw this recipe recreating it, I knew I had to try it and put my own take on it!

Ingredient
3 tablespoons olive oil
1 pound ground chicken
1 can Great Northern Beans
1 tablespoon butter
1/2 white onion, diced
3 cloves garlic, finely chopped
1/2 tablespoon ground cumin
1/2 tablespoon salt
1/2 tablespoon white pepper
1 small can green chiles (I get these at Trader Joe's)
1 tablespoon flour (I used gluten free)
2 cups chicken stock
Few dashes green Tobasco
1/4 cream
Diced green onions, for garnish

Directions
- Heat oil over medium and add chicken, cumin, salt and pepper and cook until almost done, about 5-7 minutes
- Remove chicken and set aside
- Melt butter in the pan, add onions and cook until translucent
- Add garlic and cook for about a minute
- Add the chiles, then the flour and mix together until combined
- Gradually add in chicken stock, mixing to combine
- Add the Tobasco and continue to stir
- Bring to a simmer over medium heat, add back in chicken, add in beans and simmer for about five minutes
- Stir in cream, remove from heat, serve and top with scallions

This is delicious with rice or quinoa or totally on its own if you want to be low-carb!

Lips, lips, lips!

If I had to pick one beauty product I absolutelynomatterwhatlifeordeath couldn't live without, it would be lip gloss or lip stick.  I think a great lip makes an entire face.  I have painfully thin lips that crave moisture (#chapstickaddict) so I am always reapplying.  I generally stick to pinks and warms nudes because they go best with my skin tone.  Here is my current arsenal, with which I am obsessed...

Shopaholic

Happy Tuesday lovelies!  It's shopping day!  We are still on vacation where there isn't too much shopping (I guess that's a good thing!) but I am still making sure I scout out everything online, because we can't be missing out!

If you know me, then you know I live for a good navy and white stripe.  This halter neck (and bow in the back) dresses the pattern up.  It would look so chic tucked into a hot pink little skirt!

I am always on the hunt for the perfect cami top to add to my collection.  They are my absolute favorites shirts to wear in warm weather and this one does not disappoint.  I just hope they offer more colors soon!

White shorts are such a summer staple.  I am on a mission to add a couple more pairs to my closet this summer and these babies will be coming home with me.

I need this sweater asap!  The cut is amazing and I can never say no to a cowl neck.  I realize it isn't exactly sweater weather right now, but it would be so cute to throw on on a breezy night over a tank.

It has been years since JCrew has made a dress I have loved (anyone remember their strapless dresses circa 2007?)  This one is getting back to those roots of easy, preppy, Summery dressing.  I think this is a necessity for a warm Summer evening!

Speaking of Summer dresses, this number is so easy and breezy.  I love the color and the fact that you could dress it up or down for day or night depending on your accessories.  I also love the price!

BaubleBar wins again with this baby.  This site is seriously the best place to go when you want fun accessories that are good quality at a reasonable price.  I love this turquoise (also available in coral and white and mixed) because it would match so much.  The size makes it so this is the only accessory your outfit needs.

On a daintier note, BaubleBar also has this necklace.  I love the length and symbols on it.  Everyone needs a little protection!  Sometimes a dainty chain is the best accessory.

Preppy

Q: What screams preppy to me?  A: Navy and white stripes, Jack Rogers, pearls, and tan leather.  And popped collars... madras... signet rings... I could go on.  I always fall back on preppy style.  It makes me happy and reminds me of my childhood, and hey, it looks pretty good on everyone.  I had never heard of the brand Hatley before until I scooped this dress up at a local boutique in Pennsylvania when I was down there.  The cotton is so soft and the cut is fantastic for the price point.  I can't wait to check out more of their goodies - including tons of adorable kids' clothes!

Navy Love

I love pink.  I think that's pretty apparent. However, my love for navy blue comes in a pretty close second.  I think it is a universally flattering color and always my go-to when picking out solid items.  This baby was another Target steal and the best way to try out the half sheer maxi dress trend.  Sure, the material isn't silk, but a poly-blend, but I may not want to wear this next year, and I didn't break the bank on it.  It's lightweight and cool for these hot, hot, hot summer days.

Creamy Mung Bean Fettucine

This recipe is quickly becoming one of my favorites!  I actually got the sauce recipe off the back of the mung bean noodle packaging - and it is easy and delicious.  It is gluten free (as long as you use gluten free flour) healthy and filling.  You can use whatever vegetables and protein in it, I just listed what we use. 

Ingredients
One package mung bean fettucine
Two cups mushrooms, diced
Four chicken sausage, cooked and diced
One package cherry tomatoes, halved
4 tablespoons butter
2 tablespoons flour (I used Cup4Cup so it is gfree)
2 cups milk
4 tablespoons pesto
Salt and pepper
1/4 cup Parmesan cheese

Directions
- Cook mung bean pasta according to directions
- While pasta is cooking, melt butter in a saucepan over medium heat.
- Remove from heat, add in flour and stir until becomes smooth
- Slowly add the milk and mix, returning to a low flame, stirring
- Add in cheese, salt and pepper and allow to thicken (this will be about five minutes, watch it carefully!)
- Mix noodles, tomatoes, mushrooms, sausage and sauce in a giant bowl
- Eat and enjoy!

Summer Date Night

Summer date nights are THE best!  Sipping some wine somewhere in the warm weather, dining al fresco, wearing short shorts... you name it, I love it!  I love a fun print and some wild shoes for a night out!  I also love some elastic waistband shorts because then I can stuff my face (let's be honest here) and still feel cute!  I invest in a great pair of heels every couple of years - the pair I am wearing is five plus years old - because they last and are comfortable to walk in.  Add in one great statement piece and I am good to go!
