Spinach Pancakes



You guys.  This recipe.  It has changed the way I look at breakfast.  After reading a similar recipe from Amanda I played around with the ingredients a tiny bit until I became mildly addicted to this particular one.  A lot of the recipes call for cinnamon, but I am a traditionalist when it comes to my pancakes.  I love pancakes.  I love them hard and I like to try to make the healthiest version of pancakes that taste as similar to the unhealthy versions as possible.  


This recipe packs a lot of punch thanks to the eggs (protein), spinach (all of the vitamins) and flaxseed (omega 3's.)  I make sure to use only organic ingredients to make them even healthier.  

I top with a drizzle of organic maple syrup and a little bit of organic, grass-fed butter.  This keeps you full, especially when served with a side of egg whites or lean turkey bacon.  It's a great all-around meal and it's gluten free!



Ingredients

  • 1 banana, the riper/browner the better!
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 1 cup spinach
  • 1 tablespoon ground/milled flaxseed

Directions
-----------------
  • Throw all of your ingredients in a blend 
  • Blend until smooth
  • Pour over a lightly grease skillet heated to low/medium
  • Cook for about two minutes per side
  • Make sure to watch as they will burn easily!

1 serving / 295 calories / 24 carbs / 12g fat / 18 protein

  1. So I would never think to put spinach in my pancakes but when I think about omelettes I often add them there so it's not that much of stretch!!! Can't wait to try this!! xo, Biana -BlovedBoston

  3. When I read this I was like, "nope" but thank God I didn't give up after the title. Hehe! They actually look and sound pretty good. I make banana pancakes and these don't sound that much different that I would be unwilling to try them.

  5. I am so intrigued by this recipe! In theory, it sounds pretty crazy, but they actually look delicious (even with the green color!) and I'm also always looking for healthier breakfast alternatives. I'm curious - do your kids like these? I'd love to make these for my son, but wonder if the color will throw him off.

  8. I've seen this from one other person and she said that they are amazing, too! I know my husband would be on board with trying these, so maybe spinach pancakes will be in our future soon! :)
