Lemon Pomegranate Martini + Lentil Quesadilla

Happy Tuesday loves!  I'm linking up with the gals over at The Sequin Notebook to share a new cocktail recipe.  I came up with this lightened up lemon pomegranate martini when I had a bunch of pomegranate seeds to use up (and I found out my husband actually likes them!)

This is a great Summer cocktail, because it is light, it's easy, and it is super refreshing.  Anything made with seltzer and lemon is going to cool me down after a long day and doesn't break the bank on calories!



Ingredients
1 shot vodka 
Tablespoon pomegranate seeds
Lemon Seltzer
Juice of half a lemon
Agave to taste (optional)

- Pour vodka into martini glass and add pomegranate seeds
- Squeeze in lemon and fill remainder of glass with seltzer
- Stir in agave to taste

I added a tablespoon or so of agave to mine and Josh added none.  Taste it first and decide.  If you don't have agave on hand,  Stevia or something similar should work in place!

Ingredients
2 Whole Wheat or Gluten Free tortillas
1 tablespoon olive oil
1 tablespoon greek yogurt
1/4 cup organic shredded cheddar cheese
1 tablespoon diced red onion
2 tablespoons cooked lentils

- Heat a skillet over medium and add olive oil.  Meanwhile, brush tortilla that will go on first with Greek yogurt.
- Place one tortilla on skillet.  Make sure you use the one with Greek yogurt, yogurt side facing up, away from the skillet
- Top with cheese, onions, lentils and a sprinkle of salt and let cook for 3-5 minutes, watching to make sure it doesn't burn.
- When cheese starts to melt, place other tortilla on top and carefully flip over VERY carefully.
- Let cook for another 3-5 minutes, making sure to not let it burn.  If it seems to not be cooking (this can depend on the type of tortilla you use) let it cook a little longer.
- Remove from heat, slice and enjoy!

I came up with this recipe when I was trying to find a way to use up some cooked lentils I had.  Lentils fill you up and are a great addition to any meal.  I personally use gluten free tortillas with these and fat free Greek yogurt.  I also eat it with organic salsa and Greek yogurt in place of sour cream.  It makes a great lunch or dinner!

  12. Great minds think alike, my friend. All you need is vodka and La Croix bahah. Awesome idea with the pomegranate seeds and also lentils in a quesadilla. Let me know when dinner's ready ;)

  13. This looks so good! I don't think I've ever actually tried pomegranate seeds which now seems crazy to me! I'm a huge lemon fan and love the addition of the seltzer to keep it light and refreshing - great recipe! Plus the pom seeds are so pretty!
