What I Ate Wednesday

I thought I would go an entirely different route today and try out a "What I Ate Wednesday" post.  These are floating all around on some pretty awesome blogs, and have helped me with meal ideas (breakfast and lunch are tough when you're short on time), snack ideas, diet motivation, and sometimes a reality check at how much food I really need.  

This my rundown from yesterday (Tuesday.)  


Most mornings I start with hot water and lemon, but I was short on time today so I went with my usual next drink: organic coffee with one teaspoon of ghee and stevia.  I ate half of a Think Thin bar on my way out the door to drop off Greyson and get to the gym.  After my workout I had a Svelte Protein Shake.  These are AWESOME.  They taste great and are gluten, soy and dairy free.  I gobble them up!

We had breakfast for dinner the night before, so I ate my left over frittata made with egg whites, one egg, tomatoes, spinach, onion and turkey sausage.  I knew I needed carbs, so I had a slice of Udi's Flax bread with natural peanut butter.  This hit the spot!

I made Slow Cooker Teriyaki Chicken with rice noodles and sauteed spinach and red onion.  My kids actually inhaled the noodles, so I call that a win! This meal is one of my favorites, because it is easy, delicious and fills me up!

So snacks are my big downfall.  I had half a piece of string cheese, shared with Greyson before lunch.  After lunch in the late afternoon I get REAL snacky.  I started with a few blue chips and hummus.  Then I had a few Pop Corners a bit later.  Not pictured is the half of a gluten free cupcake I shared with Avery.  

I would say this is a pretty good snap shot at my regular food diary.  Do you keep a food diary?  I think it is an awesome way to keep accountable, especially when you are going to be sharing that info with everyone!

  3. Love your ideas. I bet my kids would love that teriyaki chicken! Ugh string cheese and babybel cheese is my downfall. I get extra snacky at the same time lol. I have been trying to opt for something dairy free like avocado and tomato or cashews and some fruit.

  4. I'm the worst about snacking, too - I can inhale pretzels with hummus like nothing else!! I've been trying to stick to fresh fruit now that it is in season!

  5. All your food looks delicious, same type of stuff I go for. I've wondered about the Think Thin bars, I haven't tried any. I love those Simply Balanced blue corn tortilla, so good. I track my food & macros on MFP everyday. Do you do that or use a notebook?

  12. The leftover frittata looks so good! I'm going to look for those PopCorner White Cheddar chips-it seems like the perfect snack.

  13. I get super snacky in the afternoon too especially if I'm at home. I LOVE those Pop Corner Chips especially the Jalapeno flavor!

  14. Those svelte drinks I am obsessed! No lie my sister and I texted each other the same day the picture of it and told each other to go to Costco to get them. I love that they have no cholesterol animal products in them to get the protein in!
