recipe via Damn Delicious
2 tablespoons unsalted butter
5 ears corn, shucked and rinsed (or one small bag frozen corn)
1 jalapeno seeded and diced
2 tablespoons mayonnaise
3 tablespoons feta cheese
2 tablespoons chopped fresh cilantro
1 teaspoon chili powder
1 clove garlic, minced
Juice of 1 lime
Diced green onion
- Heat butter in a large skillet over medium heat. Add corn and jalapeno, and cook, stirring, for about 8 to 10 minutes. Make sure the corn starts to char a tiny bit.
- Remove from heat to a large bowl
- Add mayo, feta, cilantro, chili powder, garlic, and lime and mix thoroughly. Make sure you do this while it is hot!
- Top with green onion and serve!
I can't tell you how delicious this is. It's like a little bowl of heaven. Give me this and a bag of blue corn chips and I will be one happy girl!
