Taste: Mexican Corn Dip

If I had to pick a favorite side dish to any meal (besides my true love, mashed potatoes) it would hands down be Mexican street corn.  If it is on the menu, I am ordering.  I don't care what kind of mess I look like eating it, it is worth every damn bite.  

When I stumbled across this recipe, I know it had to be made immediately.  Luckily, we had an event the next day so I ran out to get all of the ingredients.  Unfortunately my store didn't have everything called for so I had to improvise, and I was pretty pleased with the results.  The recipe below has my tweaks, but you can find the original linked above it.

Ingredients
2 tablespoons unsalted butter
5 ears corn, shucked and rinsed (or one small bag frozen corn)
1 jalapeno seeded and diced
2 tablespoons mayonnaise
3 tablespoons feta cheese
2 tablespoons chopped fresh cilantro
1 teaspoon chili powder
1 clove garlic, minced
Juice of 1 lime
Diced green onion

Instructions
- Heat butter in a large skillet over medium heat.  Add corn and jalapeno, and cook, stirring, for about 8 to 10 minutes.  Make sure the corn starts to char a tiny bit.
- Remove from heat to a large bowl
- Add mayo, feta, cilantro, chili powder, garlic, and lime and mix thoroughly.  Make sure you do this while it is hot!
- Top with green onion and serve!

I can't tell you how delicious this is.  It's like a little bowl of heaven.  Give me this and a bag of blue corn chips and I will be one happy girl!

  1. I have been seeing a BUNCH of Mexican corn dishes lately and have been drooling over how delicious they look. MG and I just has some delicious corn as a side dish when we were in Chicago and I've been obsessed since. I think I need to try this out!
