Recipe: Curried Vegetable Briyani

Hello, hello lovelies!  I realized I haven't posted a recipe in ages, probably because I have been eating like crap thanks to the holidays.  October through the New Year is the worst time of the year for me.  I'm back on track and ready to be my healthiest in 2016.  Cooking more meals at home is definitely a huge part of becoming healthier, and it is something I truly love to do.  I am trying to incorporate as many vegetables as I can into every dish I make, including the one below.

2 tablespoons olive oil
3/4 cup basmati rice
1/2 yellow onion, diced
2 cloves garlic, minced
1 tomato, seeded and chopped
1 tablespoon curry powder
2 small to medium sweet potatoes, peeled and cubed
1/3 cup peas
2 tablespoons slivered almonds
1 lime
fresh mint
1/2 cup feta cheese


-  Prep food:  peel and cube sweet potatoes.  Chop tomatoes and onion.  Mince garlic and rough chop a handful of mint leaves.
-  Boil 1.5 cups water and a pinch of salt to a boil.  Add rice when boiling, then cover and reduce to a simmer for 15 minutes.  Keep covered when it's done, but remove from hot stovetop.
- Bring another pot of water with a pinch of salt to a boil.  When boiling, add the sweet potato and let boil for 10-12 minutes, until tender.  Drain and set aside.
-  Heat a drizzle of olive oil in a skillet over medium heat.  Once hot, add the onions, and cook, stirring, until soft.  Add the garlic and cook for about 30 seconds.  
-  Add the sweet potato, tomato, curry powder and peas to the pan with the rest of the olive oil.  Cook for two minutes, tossing, until cooked through.  Season with salt and pepper.  
-  Add the rice to the pan.  Squeeze lime juice over everything and add in half of the mint.  
-  Serve (can be between two and four plates, depending on your appetite!)  Top with almonds, feta and remaining mint.

  5. This sounds delicious - and glad it's not overpowering with the curry. I don't mind a hint of curry. I'm always scared to cook with it because it can be very strong.
